
Pineapple tossed with cinnamon and roasted in olive oil – so delicious!
Of course, pineapple is good all on its own. So the easiest way to eat pineapple is to just eat it plain. And it’s wonderful plain. But once in a while, I get creative, and I want to try pineapple in a different way.
This recipe is so easy and so so good.
This pineapple goes great as a side dish for grilled chicken or salmon or just about any barbecue dish.

Roasted Cinnamon Pineapple
14 ounces canned pineapple tidbits, drained (or fresh pineapple, cut into bite-sized pieces)
2 Tbsp olive oil
1/2 tsp cinnamon
- Preheat the oven to 450 F.
- In a medium bowl, combine all of the ingredients.
- Prepare a baking sheet with cooking spray. Spread the pineapple on the baking sheet in a single layer.
- Bake for 15-17 minutes.
