Sweet Roasted Carrots

Carrots roasted in olive oil and sweetened with honey. Your kids will actually enjoy eating these veggies!

Sweet Roasted Carrots

2-3 C carrots (about 3 carrots), peeled and cut into 1-inch quarters
2 Tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
1-2 Tbsp honey (use maple syrup for vegan)

    1. Preheat oven to 425F.
    2. Prepare a baking sheet with cooking spray.
    3. In a medium bowl, toss carrots with olive oil, salt, pepper and garlic powder.
    4. Spread carrots out in a single layer on the baking sheet.
    5. Bake for 14-16 minutes.
    6. Remove the carrots from the oven and place in a medium bowl. Drizzle honey over the top of the carrots and stir to combine.
    7. Serve hot.
