Patriotic Cauliflower Berry Salad

Cauliflower, raspberries, and blueberries tossed in a creamy poppyseed dressing. This salad is perfect for a Fourth of July party.

This salad is great for a barbecue. Try serving it with grilled chicken or salmon.

Patriotic Cauliflower Berry Salad

  • Servings: 8

For the salad:
2 heads of cauliflower, cut into bite-sized pieces
6 oz blueberries
6 oz raspberries

For the dressing:
2/3 C mayonnaise
1/4 C lemon juice
3 Tbsp sugar
1 Tbsp poppy seeds
1 tsp salt
1 tsp white pepper

1. In a medium bowl, combine the ingredients for the dressing. Whisk to get rid of any lumps.
2. Put the cauliflower in a large bowl. Pour the dressing over the cauliflower and stir until the cauiflower is well coated with the dressing.
3. Chill the cauliflower until you are ready to serve it.
4. Just before serving, mix in the blueberries and top with raspberries.
