These flavorful curry lentils are so good for you and so easy to make in your slow cooker!

2 C dry lentils
1 onion, chopped
1 head cauliflower, chopped
1 Tbsp minced garlic
1 Tbsp minced ginger
2 Tbsp red curry paste
1 1/2 tsp salt
1 tsp turmeric
1 1/2 tsp garam masala
1/2 tsp cayenne pepper
29 oz tomato puree
2 C water
1 C canned coconut milk
Usually, when I find a recipe, I make changes to it – to make it easier or healthier or tastier. But I found this recipe at one of my favorite food blogs (Well-Plated), and it is pretty much perfect just the way it is. The only change I would recommend from the original recipe is increasing the coconut milk from 1/2 C to 1 C, to make the lentil sauce creamier.
