Slow Cooker Curry Lentil Soup

This healthy comforting soup is so easy to make!
Servings: 6
Prep time: 10 minutes
Total time: 8 hours
3 Tbsp butter
1 onion, diced
1/2 tsp salt
1/4 tsp pepper
1 C shredded carrots
1 Tbsp minced garlic
1 Tbsp minced ginger
1 tsp turmeric
1/2 tsp curry powder
1/2 tsp cardamom
1/4 tsp cinnamon
1 1/4 C dry lentils
4 C water
4 tsp chicken bouillon
1 C full-fat coconut milk
  1. Combine everything except for the coconut milk in your slow cooker.
  2. Cook on low for about 8 hours.
  3. About 10 minutes before serving, stir in the coconut milk.
